Description

A delicious Southern Squash Casserole that combines yellow squash, cheese, and buttery crackers for a comforting dish.

Ingredients

  • 2 pounds yellow squash, sliced
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons butter, melted
  • 1/2 cup additional crushed crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish with cooking spray or butter.
  2. In a large pot, bring water to a boil. Add the sliced squash and chopped onion, cooking for about 5 minutes until tender. Drain well and set aside.
  3. In a large mixing bowl, combine the shredded cheddar cheese, crushed crackers, milk, eggs, mayonnaise, salt, black pepper, garlic powder, and onion powder. Mix until well combined.
  4. Fold the drained squash and onion mixture into the cheese mixture until evenly coated.
  5. Pour the mixture into the prepared baking dish. In a small bowl, combine the additional crushed crackers with the melted butter, then sprinkle evenly over the top of the casserole.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
  7. Remove from the oven and let it cool for about 5 minutes before serving.

Notes

  • For added flavor, consider mixing in cooked bacon or sausage to the squash mixture before baking.
  • Substitute zucchini for half of the yellow squash for a different flavor profile and added color.
