Description
A refreshing and healthy Carrot and Apple Salad that combines the sweetness of apples with the crunch of carrots, perfect as a side dish or light lunch.
Ingredients
- 2 cups grated carrots
- 2 cups grated apples (about 2 medium apples)
- 1/2 cup raisins
- 1/2 cup chopped walnuts (optional)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the grated carrots and grated apples.
- Add the raisins and chopped walnuts, if using, to the bowl.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the dressing over the carrot and apple mixture and toss until everything is well coated.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish or a light lunch.
Notes
- For a vegan option, substitute Greek yogurt with coconut yogurt and honey with maple syrup.
- Add a handful of spinach or mixed greens for extra nutrition and color.
