Description

A refreshing and healthy Carrot and Apple Salad that combines the sweetness of apples with the crunch of carrots, perfect as a side dish or light lunch.


Ingredients

  • 2 cups grated carrots
  • 2 cups grated apples (about 2 medium apples)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the grated carrots and grated apples.
  2. Add the raisins and chopped walnuts, if using, to the bowl.
  3. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
  4. Pour the dressing over the carrot and apple mixture and toss until everything is well coated.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
