Ingredients
- 2 large pancakes (leftover or freshly made)
- 2 large eggs
- 4 slices of cooked bacon or sausage patties
- 1/2 cup shredded cheddar cheese
- 2 tablespoons maple syrup
- Salt and pepper to taste
- Butter or cooking spray for frying
Instructions
- In a skillet over medium heat, melt a small amount of butter or spray with cooking spray.
- Crack the eggs into the skillet and season with salt and pepper. Cook the eggs to your desired doneness (sunny-side up, over-easy, or scrambled).
- While the eggs are cooking, warm the pancakes in a separate skillet or microwave until heated through.
- To assemble the sandwich, place one pancake on a plate.
- Layer with cooked bacon or sausage, followed by the cooked egg, and top with shredded cheddar cheese.
- Drizzle with maple syrup and finish with the second pancake on top.
- Serve immediately while warm.
