Description

Mini Chicken Quesadillas are a quick and delicious snack perfect for any occasion.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, frozen or canned
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour tortillas
  • Cooking spray or olive oil for frying
  • Sour cream and salsa for serving

Instructions

  1. In a large bowl, combine the shredded chicken, cheddar cheese, black beans, corn, red bell pepper, onion, cumin, chili powder, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
  2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
  3. Place one tortilla in the skillet and spoon about 1/4 cup of the chicken mixture onto one half of the tortilla. Fold the tortilla over to create a half-moon shape.
  4. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove from the skillet and keep warm. Repeat with the remaining tortillas and filling.
  5. Slice each quesadilla into wedges and serve warm with sour cream and salsa on the side.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the filling mixture.
  • Substitute the chicken with cooked ground beef or turkey for a different flavor profile.
