Description

A delicious and unique grilled cheese sandwich filled with creamy spinach and artichoke dip.


Ingredients

  • 2 slices of sourdough bread
  • 1 tablespoon unsalted butter, softened
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Spread butter on one side of each slice of sourdough bread.
  3. Place one slice of bread, butter side down, in a skillet over medium heat.
  4. Spoon the spinach and artichoke mixture onto the bread in the skillet, spreading it evenly.
  5. Top with the second slice of bread, butter side up.
  6. Cook for about 3-4 minutes until the bottom slice is golden brown. Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  7. Remove from the skillet, let cool for a minute, then slice in half and serve warm.

Notes

  • For a lighter version, use whole grain bread and reduce the amount of cheese.
  • You can also add cooked chicken or turkey for extra protein.
  • For a spicy kick, mix in some chopped jalapeños or a dash of hot sauce into the spinach and artichoke mixture.
