Chicken and Biscuit Cobbler is a comforting dish that combines tender chicken and mixed vegetables in a creamy sauce, topped with fluffy biscuit dough.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk (for biscuit topping)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, chicken broth, 1 cup of milk, garlic powder, onion powder, thyme, salt, and pepper. Stir until well combined. Pour the mixture into a greased 9×13-inch baking dish.
  3. In another bowl, whisk together the flour, baking powder, and 1/2 teaspoon salt. Add the melted butter and 1/2 cup of milk to the dry ingredients, stirring until just combined.
  4. Drop spoonfuls of the biscuit batter over the chicken mixture in the baking dish, covering as much of the surface as possible.
  5. Bake in the preheated oven for 30-35 minutes, or until the biscuit topping is golden brown and cooked through.
  6. Let cool for 5 minutes before serving.

Notes

  • For a creamier filling, add 1/2 cup of cream cheese to the chicken mixture before baking.
  • To make it spicy, add a teaspoon of cayenne pepper or diced jalapeños to the chicken mixture.
