Description

These Cinnamon Sugar Pumpkin Bites are the ultimate fall treat! Crispy on the outside, soft and moist on the inside, and coated in sweet cinnamon sugar, they’re perfect for cozy gatherings or a quick snack. Whip them up in under 30 minutes and indulge in a delightful autumnal dessert that everyone will love!

Ingredients

  • 2 cups pumpkin puree
  • 1 cup granulated sugar (plus extra for rolling)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup whole milk
  • Vegetable oil (for frying)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  2. Prepare Wet Ingredients: In a separate bowl, whisk the pumpkin puree, granulated sugar, and eggs until smooth.
  3. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with milk. Stir until a thick dough forms. Do not overmix.
  4. Heat Oil: In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).
  5. Fry Bites: Using a small scoop or tablespoon, drop spoonfuls of dough into the hot oil. Fry for 2-3 minutes on each side until golden brown.
  6. Drain and Roll: Remove the bites from the oil with a slotted spoon and place on paper towels. While still warm, roll them in granulated sugar to coat.

Notes

  • Substitutions: Use almond or oat milk for a dairy-free version. Substitute all-purpose flour with a gluten-free blend for a gluten-free option.
  • Storage: Store in an airtight container at room temperature for up to two days. Reheat in the oven for a fresher texture.
  • Baking Option: To bake instead of frying, preheat your oven to 375°F (190°C) and bake for 10-12 minutes or until golden.
