Description

Transform simple baby potatoes into an irresistible dish with this Easy Creamy Garlic Sauce Baby Potatoes Recipe. Crispy roasted potatoes are smothered in a rich, garlicky cream sauce, then topped with Parmesan and fresh parsley for a flavor-packed side dish. Perfect for weeknight dinners, holidays, or any time you want a crowd-pleasing comfort food!

Ingredients

  • 1 lb (450 g) baby potatoes, washed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer on the prepared baking sheet.
  • Roast the Potatoes: Place the baking sheet in the oven and roast the potatoes for 25–30 minutes, flipping them halfway through, until they are tender and golden brown.
  • Make the Garlic Sauce: While the potatoes are roasting, melt the butter in a skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
  • Prepare the Creamy Sauce: Stir in the heavy cream and bring it to a gentle simmer. Cook for 3–4 minutes, allowing the sauce to thicken slightly. Remove from heat and stir in the grated Parmesan cheese until fully melted and smooth.
  • Combine and Serve: Transfer the roasted potatoes to a serving dish. Pour the creamy garlic sauce over the potatoes and garnish with chopped fresh parsley. Serve warm.

Notes

  • If using larger potatoes, cut them into smaller chunks to ensure even roasting.
  • For an extra layer of flavor, add a pinch of red pepper flakes or smoked paprika to the garlic sauce.
  • This dish is best served fresh, but leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave to preserve the texture.
  • To make this recipe vegetarian-friendly, ensure your Parmesan cheese is made without animal rennet.
