Description
Tender, flavorful corned beef slow-cooked to perfection and finished under the broiler for a crispy crust. A hands-off meal that’s incredibly satisfying!
Ingredients
- 3–4 lb corned beef brisket with spice packet
- 4 cups water
- 1 onion, quartered
- 3 cloves garlic, smashed
- 2 bay leaves
- 1 tablespoon whole grain mustard (optional)
Instructions

Place onion, garlic, bay leaves, and corned beef (fat side up) in the slow cooker.

Add contents of spice packet and pour in water to just cover the meat.

Cover and cook on low for 8–9 hours or high for 4–5 hours.

Preheat broiler. Remove brisket, pat dry, and brush with mustard if using.

Broil 5–7 minutes until crispy on top.

Slice against the grain and serve.
Notes
- Save broth for cooking cabbage or potatoes.
- Add carrots and potatoes during the last 2 hours for a full meal.
