Description

 Tender, flavorful corned beef slow-cooked to perfection and finished under the broiler for a crispy crust. A hands-off meal that’s incredibly satisfying!


Ingredients

  • 34 lb corned beef brisket with spice packet
  • 4 cups water
  • 1 onion, quartered
  • 3 cloves garlic, smashed
  • 2 bay leaves
  • 1 tablespoon whole grain mustard (optional)

Instructions

  • Place onion, garlic, bay leaves, and corned beef (fat side up) in the slow cooker.

  • Add contents of spice packet and pour in water to just cover the meat.

  • Cover and cook on low for 8–9 hours or high for 4–5 hours.

  • Preheat broiler. Remove brisket, pat dry, and brush with mustard if using.

  • Broil 5–7 minutes until crispy on top.

  • Slice against the grain and serve.

Notes

  • Save broth for cooking cabbage or potatoes.
  • Add carrots and potatoes during the last 2 hours for a full meal.
