This one-skillet wonder combines tender chicken thighs with creamy broccoli cheddar orzo for a comforting, rich, and cheesy dinner made in under an hour.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 1/2 cups orzo pasta
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups chopped broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder

Instructions

  • Season chicken thighs with paprika, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Cook chicken thighs for 5–6 minutes per side until golden; remove and set aside.
  • In the same skillet, add orzo and garlic powder; toast for 1 minute.
  • Pour in chicken broth and milk; bring to a simmer.
  • Add broccoli and cook for 8–10 minutes, stirring often, until orzo is tender.
  • Stir in cheddar cheese until melted and creamy.
  • Return chicken to skillet and cook for 5 more minutes, covered.
  • Serve hot.

Notes

  • Add red pepper flakes for heat.
  • Use pre-cooked chicken to speed up the recipe.
