Ingredients

  • 4 bone-in chicken thighs
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 cups cooked rice

Instructions

  • Season chicken thighs with salt, pepper, and paprika.
  • Heat oil in a skillet and brown chicken on both sides. Remove and set aside.
  • In the same pan, sauté onion and garlic until soft.
  • Stir in soup, broth, and sour cream. Mix until combined.
  • Return chicken to the skillet, cover, and simmer on low for 30 minutes until chicken is cooked through.
  • Serve over warm rice.
