Description
A quick and tasty Chicken Bacon Ranch Quesadilla recipe that combines shredded chicken, crispy bacon, and melted cheese with ranch dressing.
Ingredients
- 2 cups cooked chicken, shredded
- 6 slices cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, chopped bacon, cheddar cheese, mozzarella cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Heat a large skillet over medium heat and add the olive oil.
- Place one tortilla in the skillet and spread about 1/4 of the chicken mixture evenly over half of the tortilla.
- Fold the tortilla in half and cook for about 3-4 minutes, or until the bottom is golden brown.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until golden and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing into wedges.
- Repeat steps 3-6 for the remaining tortillas and filling.
Notes
- For extra flavor, try adding diced jalapeños or bell peppers to the chicken mixture.
- You can also substitute the ranch dressing with blue cheese dressing for a different taste.
