Crispy Shrimp and Sweet Potato Fritters are a delicious and crunchy treat, perfect for any seafood lover.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 medium sweet potato, grated (about 1 cup)
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup cold water
- Vegetable oil, for frying
Instructions
- In a large bowl, combine the grated sweet potato, flour, cornstarch, baking powder, salt, and black pepper. Mix well.
- Add the cold water gradually, stirring until the batter is smooth and well combined.
- Fold in the shrimp, green onions, and cilantro until evenly distributed.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
- Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- Serve hot with a dipping sauce of your choice.
Notes
- For added flavor, consider marinating the shrimp in a little garlic and lime juice for 15 minutes before mixing into the batter.
- You can substitute the shrimp with cooked crab or fish for a different seafood twist.
