Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the cottage cheese, room-temperature egg, almond flour, baking powder, and salt. Mix until just combined.
  2. Decide whether to use the microwave or oven. If using the microwave, grease a dish and spoon the batter into it. Cook on high for 2 minutes.
  3. For the oven method, preheat to 350°F (175°C) and line a baking sheet. Spoon the batter onto the sheet and bake for 12-15 minutes.
  4. Let the biscuits rest for 2-3 minutes after cooking.
  5. Slice warm and enjoy with toppings of your choice.
