- In a mixing bowl, combine 1 cup of cottage cheese, 1 room-temperature egg, 1 cup of almond flour, 1 tablespoon of baking powder, and a pinch of salt. Stir gently until just combined.
- Decide whether you’d like to microwave or bake your biscuits. For the microwave, grease a microwave-safe dish and spoon the batter into it. Cook on high for 2 minutes.
- For the oven, preheat it to 350°F (175°C), then drop spoonfuls of batter onto a parchment-lined baking sheet, baking for 12-15 minutes until golden.
