Ingredients

  • 1 pound boneless skinless chicken breast or thighs, cut into 1-inch pieces
  • 1/2 pound broccoli cut into florets
  • 1/2 medium onion thickly sliced
Marinade:
  • 3 tablespoons olive oil
  • 1 tablespoon fresh minced ginger
  • 3 cloves garlic minced
  • 2 tablespoons low-sodium soy sauce or Tamari for gluten-free
  • 1 tablespoon rice vinegar or distilled white vinegar for gluten-free
  • 1 teaspoon sesame oil
  • 1 teaspoon smoked paprika
  • 2 teaspoons honey
  • 1 teaspoon hoisin sauce
  • Salt and ground black pepper to taste

Method

  1. Prepare the Marinade
  2. In a medium mixing bowl, whisk together olive oil, minced ginger, minced garlic, soy sauce, rice vinegar, sesame oil, smoked paprika, honey, hoisin sauce, salt, and black pepper.
  3. Marinate the Chicken and Vegetables
  4. Place the chicken pieces in one bowl and the broccoli florets with onion slices in another bowl.
  5. Split the marinade evenly between the two bowls. Toss the chicken and vegetables separately until well coated.
  6. Preheat the Air Fryer
  7. Preheat your air fryer to 380°F (193°C) for about 3-5 minutes.
  8. Cook the Chicken
  9. Add the marinated chicken pieces to the air fryer basket in a single layer. Air fry at 380°F for 10 minutes, shaking the basket or flipping the chicken halfway through for even cooking.
  10. Add the Vegetables
  11. After 10 minutes, add the broccoli and onions to the air fryer with the chicken. Continue cooking for 8-11 minutes, stirring halfway through.
  12. Check for Doneness
  13. Ensure the chicken is fully cooked to an internal temperature of 165°F (74°C), and the broccoli is tender with slightly crispy edges.
  14. Serve and Garnish
  15. Transfer the chicken and broccoli to a serving plate. Garnish with sesame seeds, a squeeze of fresh lemon juice, or additional soy sauce if desired. Serve warm and enjoy!

Notes

  • For Even Cooking: Cut the chicken and broccoli into similar-sized pieces to ensure they cook evenly.
  • Marinate for Extra Flavor: While 10 minutes of marinating is fine, letting the chicken sit in the marinade for up to 2 hours in the fridge enhances the flavor.
  • Make It Gluten-Free: Swap soy sauce with Tamari and ensure your hoisin sauce is gluten-free.
  • Vegetable Substitutions: Add bell peppers, carrots, or snap peas for variety. Adjust cooking time slightly for harder vegetables.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes to maintain texture.
