Ingredients
  

For the Peppers
  • 4 pieces Orange Bell Peppers Choose firm peppers for easy carving.
For the Filling
  • 1 tablespoon Olive Oil Can substitute with canola or vegetable oil.
  • 1 pound Ground Beef or Turkey Or use cooked lentils or black beans for vegetarian.
  • 1 small Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 can Diced Tomatoes Undrained.
  • 2 cups Cooked Rice Brown rice can be used.
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Shredded Cheddar Cheese Substitute with Monterey Jack or crumbled cotija.
For the Topping
  • 1 cup Extra Shredded Cheese Add on top before baking.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the orange bell peppers and scoop out the seeds and membranes.
  3. In a large skillet, heat olive oil, add the ground beef or turkey, and cook until browned.
  4. Add chopped onions to the skillet and sauté until softened.
  5. Stir in minced garlic and add undrained diced tomatoes to the skillet. Simmer for 5 minutes.
  6. Mix in cooked rice, dried oregano, salt, and black pepper. Remove from heat and stir in ½ cup of shredded cheese.
  7. Stuff the peppers with the filling and place them upright in a baking dish.
  8. Cover with foil and bake for 30 minutes. Then remove foil, sprinkle with extra cheese, and bake for another 10-15 minutes.
  9. Allow to cool for a few minutes before serving.
