- Preheat your oven to 375°F (190°C).
- Slice the tops off the orange bell peppers and scoop out the seeds and membranes.
- In a large skillet, heat olive oil, add the ground beef or turkey, and cook until browned.
- Add chopped onions to the skillet and sauté until softened.
- Stir in minced garlic and add undrained diced tomatoes to the skillet. Simmer for 5 minutes.
- Mix in cooked rice, dried oregano, salt, and black pepper. Remove from heat and stir in ½ cup of shredded cheese.
- Stuff the peppers with the filling and place them upright in a baking dish.
- Cover with foil and bake for 30 minutes. Then remove foil, sprinkle with extra cheese, and bake for another 10-15 minutes.
- Allow to cool for a few minutes before serving.
