  • 2 cups shredded carrots
  • 1 cup diced apples about 2 medium apples
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts optional
  • 1/4 cup chopped fresh parsley
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the shredded carrots, diced apples, dried cranberries, walnuts (if using), and chopped parsley. Toss gently to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, cinnamon, salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and toss until all the ingredients are well coated.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled, and enjoy your refreshing salad!
