Preparation
- In a large non-stick skillet, heat the diced bacon over medium heat for about 5-7 minutes until it’s crispy and golden brown.
- Remove the bacon with a slotted spoon and set it aside, leaving about 1 tablespoon of the rendered fat in the skillet.
- Add the cabbage wedges to the skillet, cooking for 2-3 minutes on each side until they develop a light golden-brown color.
- Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
- Arrange the browned cabbage wedges in the dish, overlapping slightly and scatter the apple wedges around.
- In a medium bowl, whisk together the apple juice, grainy mustard, and kosher salt until fully combined.
- Slowly stir in the heavy cream until the mixture is smooth and creamy.
- Pour the cream mixture evenly over the cabbage and apple wedges, ensuring every piece gets coated.
- Sprinkle the cooked bacon on top.
- Place the baking dish in the preheated oven and bake for 45-55 minutes, basting every 15 minutes.
- Once baked, let it cool slightly before serving.

Notes
For best flavor, choose fresh, green cabbage and consider using smoked paprika as a bacon alternative for a vegetarian version.
