For the Cabbage

  • 4-6 strips Bacon diced; can be omitted for vegetarian option.
For the Sauce
  • 2 apples Apples cut into 8 wedges each; a sweet variety like Gala works wonderfully.
  • 0.5 cup Apple Juice to boost sweetness and add moisture.
  • 1 tbsp Grainy Mustard for a tangy depth that enhances flavor.
  • 1.5 tsp Kosher Salt to elevate and balance the flavors.
  • 1.25 cups Heavy Cream for a rich, creamy texture.

Equipment

  • Large non-stick skillet
  • 13" x 9" baking dish
  • Medium bowl

Method

Preparation
  1. In a large non-stick skillet, heat the diced bacon over medium heat for about 5-7 minutes until it’s crispy and golden brown.
  2. Remove the bacon with a slotted spoon and set it aside, leaving about 1 tablespoon of the rendered fat in the skillet.
  3. Add the cabbage wedges to the skillet, cooking for 2-3 minutes on each side until they develop a light golden-brown color.
  4. Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it.
  5. Arrange the browned cabbage wedges in the dish, overlapping slightly and scatter the apple wedges around.
  6. In a medium bowl, whisk together the apple juice, grainy mustard, and kosher salt until fully combined.
  7. Slowly stir in the heavy cream until the mixture is smooth and creamy.
  8. Pour the cream mixture evenly over the cabbage and apple wedges, ensuring every piece gets coated.
  9. Sprinkle the cooked bacon on top.
  10. Place the baking dish in the preheated oven and bake for 45-55 minutes, basting every 15 minutes.
  11. Once baked, let it cool slightly before serving.
