In a large bowl, combine the green cabbage, red cabbage, carrots, bell pepper, cucumber, green onions, and cilantro. Toss well to mix all the vegetables evenly.
In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, garlic, and sesame seeds until well combined.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Let the salad sit for about 10 minutes to allow the flavors to meld.
Just before serving, sprinkle the toasted sesame seeds on top for added crunch.
