This light asparagus salad combines tender stalks with lemon, herbs, and shaved parmesan for a crisp and elegant bite.

Ingredients
  

  • 1 bunch asparagus trimmed and blanched
  • 1/4 red onion sliced thin
  • 1/4 cup shaved parmesan
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Method
 

  1. Blanch asparagus until just tender, then transfer to an ice bath.
  2. Slice into bite-sized pieces and place in a bowl with onion and parmesan.
  3. Drizzle with olive oil and lemon juice, then season and toss.
  4. Garnish with parsley and serve chilled or at room temp.

Notes

  • For more flavor, add chopped toasted almonds or a soft-boiled egg on top.
