Marination and Cooking Steps
  1. In a large mixing bowl, combine the organic chicken with the browning sauce, Jamaican green seasoning, sea salt, all-purpose blend, smoked paprika, and curry powder. Toss to coat the chicken thoroughly. Cover and marinate for at least 3 hours, preferably overnight.
  2. Heat a large skillet over medium heat. Add olive oil and brown sugar, allowing the sugar to dissolve. Sear the marinated chicken pieces for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, add an extra tablespoon of olive oil and the remaining Jamaican curry powder. Stir for 2-3 minutes to release flavors.
  4. Sauté minced garlic, fresh ginger, scotch bonnet peppers, green onions, carrots, and bell pepper for about 5 minutes until tender.
  5. Pour in coconut milk and chicken stock, stirring to combine. Bring to a gentle boil, then return chicken pieces, cubed potatoes, and thyme to the skillet.
  6. Lower heat to simmer, cover, and cook for 20-25 minutes, stirring occasionally. Adjust seasoning if needed.
