Ingredients
  

For the Fritters:
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • cup granulated sugar
  • 2 large apples peeled, cored, and diced
  • 1 teaspoon lemon juice to prevent apples from browning
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter melted
For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

Prepare the Apples:
  1. Peel, core, and dice the apples into small pieces.
  2. Toss them in a bowl with lemon juice to prevent browning.
Preheat the Oven & Prepare the Baking Sheet:
  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
Mix the Dry Ingredients:
  1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
Combine the Wet Ingredients:
  1. In another bowl, beat the eggs, then add milk, vanilla extract, and melted butter. Mix well.
Combine Everything:
  1. Gradually fold the wet ingredients into the dry ingredients.
  2. Stir in the diced apples, ensuring they are evenly distributed.
Form the Fritters:
  1. Using a spoon, drop small mounds of batter onto the prepared baking sheet.
  2. Gently press them down to flatten slightly.
Bake to Perfection:
  1. Bake for 15-18 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  2. Remove from the oven and let them cool slightly.
Prepare the Glaze:
  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm fritters.
Serve & Enjoy:
  1. Allow the glaze to set before serving.
  2. Enjoy warm with a cup of coffee, tea, or hot cocoa!
