Ingredients
  

  • 2 cups cooked shredded chicken
  • 1/2 cup salsa
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 mini taco shells
  • Optional toppings: sour cream diced tomatoes, cilantro, jalapeños

Method
 

  1. Preheat oven to 400°F.
  2. In a mixing bowl, combine shredded chicken, salsa, cumin, chili powder, and garlic powder.
  3. Line up taco shells in a baking dish. Spoon chicken mixture evenly into each shell.
  4. Top with shredded cheeses and bake for 10–12 minutes or until cheese is melted and edges are crisp.
  5. Serve immediately with your favorite toppings.

Notes

  • Swap in ground beef or turkey if preferred.
  • Add refried beans under the chicken for a heartier version.
