Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/2 cup cornflakes crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup honey
  • 2 tablespoons hot sauce like Frank’s RedHot
  • 1 tablespoon butter melted

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Soak chicken breasts in buttermilk for 30 minutes.
  3. In a bowl, mix panko, crushed cornflakes, garlic powder, paprika, salt, and pepper.
  4. Remove chicken from buttermilk, letting excess drip off, and coat thoroughly in breadcrumb mixture.
  5. Place coated chicken on the baking sheet. Spray lightly with cooking spray.
  6. Bake for 25–30 minutes or until chicken is golden and internal temp reaches 165°F.
  7. Meanwhile, mix honey, hot sauce, and melted butter in a small saucepan over low heat until warm.
  8. Drizzle hot honey sauce over baked chicken before serving.

Notes

  • Adjust hot sauce amount to control heat level.
  • You can swap cornflakes with crushed Ritz crackers for a buttery crunch.
