Ingredients
  

  • 8 oz pasta of choice
  • 1 block 8 oz feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic minced
  • ¼ cup olive oil
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat oven to 400°F. Place feta in the center of a baking dish and surround with tomatoes and garlic.
  2. Drizzle everything with olive oil and sprinkle with red pepper flakes, salt, and pepper.
  3. Bake for 30 minutes or until tomatoes burst and feta is soft.
  4. Meanwhile, cook pasta according to package directions.
  5. Once baked, mash feta and tomatoes together in the dish.
  6. Add cooked pasta and toss to combine. Garnish with basil.

  • Add spinach or arugula for a fresh twist
  • Use gluten-free pasta if needed
  • Crumbled feta works if you don’t have a block
