Step‑by‑Step Instructions for Baked Salmon Sushi Bites
  1. Preheat your oven to 200°C (400°F).
  2. Cut the nori sheets into 12 equal squares, each about 4 inches in size.
  3. In a mixing bowl, combine the cubed salmon, sesame oil, low sodium soy sauce, garlic powder, smoked paprika, Korean chili powder, half of the chopped spring onion, and a pinch of salt. Gently mix all the ingredients together until uniformly coated.
  4. Lightly grease the muffin slots of your tin and press a nori square into each slot to create a cup shape. Fill each nori cup with a generous tablespoon of pre-cooked sushi rice, pressing it down lightly for stability. Add a few cucumber pieces on top.
  5. Fill your nori cups with the salmon mixture, distributing the seasoned salmon cubes evenly among the prepared cups.
  6. Place the muffin tin in your preheated oven and bake for about 15 minutes. Optionally switch to broil for the last 1-2 minutes for an extra crispy finish.
