Preparation Steps
- Begin by coarsely chopping the pistachios and any other nuts (or seeds) of your choice. In a mixing bowl, combine the chopped nuts with almond flour, a pinch of salt, lime zest, and optional cinnamon. Drizzle a little maple syrup over the mixture, stirring until all ingredients are well coated and form a sticky blend, then set aside to let the flavors meld.
- In a small saucepan or microwave-safe bowl, heat your nondairy milk until it's steaming but not boiling, approximately 1–2 minutes in the microwave or over low heat on the stovetop.
- In a separate mixing bowl, combine the rolled oats, chia seeds, maple syrup, and vanilla extract. Pour in 3/4 cup of the heated nondairy milk and add the non-dairy yogurt along with lime zest. Stir until all ingredients are well mixed and the oats are fully coated.
- Transfer the prepared oat mixture into jars or bowls, ensuring an even layer. Gently stir in a portion of the nut mixture. Top the oats with the remaining nut mixture, and if you wish, add fresh fruit like berries or orange slices.
- Cover the jars or bowls with lids or plastic wrap and place them in the refrigerator. Allow your Baklava Overnight Oats to chill for at least 4 hours or overnight.
