  • 1 cup Old Fashioned Oats use rolled oats, not instant
  • 2 tablespoons Chia Seeds for thickening and protein
  • 1 cup Nondairy Milk can substitute with almond, soy, or oat milk
  • 2 tablespoons Maple Syrup or agave syrup for sweetness
  • 1/2 cup Non-Dairy Yogurt coconut or almond yogurt works well
  • 1 teaspoon Lime Zest optional but recommended
Nut Topping
  • 1/2 cup Baklava Nut Topping mix of pistachios, walnuts/pecans, and almond flour
  • 1/4 teaspoon Salt balances flavors

Method
 

Preparation Steps
  1. Begin by coarsely chopping the pistachios and any other nuts (or seeds) of your choice. In a mixing bowl, combine the chopped nuts with almond flour, a pinch of salt, lime zest, and optional cinnamon. Drizzle a little maple syrup over the mixture, stirring until all ingredients are well coated and form a sticky blend, then set aside to let the flavors meld.
  2. In a small saucepan or microwave-safe bowl, heat your nondairy milk until it's steaming but not boiling, approximately 1–2 minutes in the microwave or over low heat on the stovetop.
  3. In a separate mixing bowl, combine the rolled oats, chia seeds, maple syrup, and vanilla extract. Pour in 3/4 cup of the heated nondairy milk and add the non-dairy yogurt along with lime zest. Stir until all ingredients are well mixed and the oats are fully coated.
  4. Transfer the prepared oat mixture into jars or bowls, ensuring an even layer. Gently stir in a portion of the nut mixture. Top the oats with the remaining nut mixture, and if you wish, add fresh fruit like berries or orange slices.
  5. Cover the jars or bowls with lids or plastic wrap and place them in the refrigerator. Allow your Baklava Overnight Oats to chill for at least 4 hours or overnight.

Notes
