Method
- Preheat oven to 375°F (190°C) and line a muffin tin.
- In a large bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, combine mashed bananas, sugar, butter, egg, and vanilla.
- Add wet ingredients to dry and mix until just combined.
- Fill muffin cups and top with streusel.
- Bake for 18–20 minutes until golden.
Notes
- Use very ripe bananas for best flavor
- Don't overmix the batter
- Add nuts or chocolate chips if desired
- Freeze leftovers for quick breakfasts
- Double the streusel for extra crunch
