Ingredients
  

For the Caramelized Banana Topping:
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 2 ripe bananas sliced
For the Cake Batter:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe banana about 1 medium banana
  • 1/2 cup buttermilk

Method
 

  1. Preheat & Prepare Pan: Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Make the Caramelized Banana Topping: In a saucepan, melt butter and brown sugar over medium heat, stirring until smooth. Pour into the cake pan and arrange banana slices over the caramel.
  3. Prepare the Cake Batter: In a bowl, whisk flour, baking powder, baking soda, and salt.
  4. Cream Butter & Sugar: In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and mashed banana.
  5. Combine & Mix: Alternate adding the dry ingredients and buttermilk to the batter, mixing until just combined.
  6. Bake: Pour batter over the banana topping. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Flip & Serve: Let the cake cool for 10 minutes, then invert onto a plate. Serve warm and enjoy!

Notes

  • For extra flavor, add cinnamon or nutmeg to the cake batter.
  • Use overripe bananas for a naturally sweeter cake.
