Method
- Melt the butter in a small skillet over medium heat.
- Add the brown sugar and cinnamon, stirring until the sugar dissolves and the mixture is bubbly.
- Slice the banana in half lengthwise and add it to the skillet, cooking for about 1-2 minutes on each side until caramelized.
- Carefully add the vanilla extract and rum, if using, and cook for another minute, allowing the alcohol to cook off.
- Remove from heat and serve the banana mixture over a scoop of vanilla ice cream.
