Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 2 green onions sliced (for garnish)

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix together the flour, garlic powder, paprika, salt, and black pepper.
  3. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
  4. Coat each piece of chicken in the flour mixture, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs. Place the breaded chicken pieces on the prepared baking sheet.
  5. Bake the chicken in the preheated oven for 20-25 minutes, or until golden brown and cooked through, flipping halfway through for even cooking.
  6. While the chicken is baking, prepare the sauce by mixing together the mayonnaise, sweet chili sauce, and sriracha in a bowl.
  7. Once the chicken is done, remove it from the oven and toss it in the sauce until well coated.
  8. Serve the Bang Bang Chicken hot, garnished with sliced green onions.
