Ingredients
  

For the Salmon
  • 4 fillets Salmon Use whole fillets or cut into cubes
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise Greek yogurt can be a lighter substitute
  • 2 tablespoons Honey
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Lime Juice Fresh lime juice is best
  • 1 tablespoon Chili Sauce Adjust for desired heat
For the Salad
  • 1 cup Cucumber Chopped
  • 1 medium Avocado Add just before serving
  • 1 cup Edamame Fresh or frozen
  • 2 cups Additional Vegetables e.g. shredded cabbage, green beans

Method
 

Sauce Preparation
  1. In a medium bowl, whisk together mayonnaise, honey, soy sauce, lime juice, and chili sauce until smooth. Reserve a quarter of the sauce for drizzling later.
Preparation of Salmon
  1. Cut salmon into bite-sized cubes and season lightly with salt and pepper.
Cooking the Salmon
  1. Preheat air fryer to 200°C (400°F) and cook salmon cubes for 8-10 minutes until golden brown, or bake in the oven for 12-15 minutes.
Salad Assembly
  1. Chop cucumber, avocado, and any additional vegetables. Combine in a large bowl and drizzle with lime juice.
Serving
  1. Toss cooked salmon in the prepared sauce and plate alongside the salad. Drizzle with reserved sauce.
