Beef Enchiladas are a delicious meal for everyone!

A comforting classic with bold flavors, these cheesy ground beef enchiladas are packed with seasoned beef, smothered in enchilada sauce, and baked to melty perfection.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 cups red enchilada sauce
  • Fresh cilantro for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.
  3. Stir in garlic powder, cumin, chili powder, paprika, salt, and pepper.
  4. Spread a spoonful of enchilada sauce in a baking dish.
  5. Fill each tortilla with beef and a sprinkle of cheese, roll up, and place seam-side down.
  6. Pour remaining sauce over the top and cover with remaining cheese.
  7. Bake uncovered for 20 minutes or until bubbly.
  8. Garnish with cilantro before serving.

Notes

  • Use corn tortillas for a more traditional texture.
  • You can prep these ahead and freeze before baking.
