Method
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.
- Stir in garlic powder, cumin, chili powder, paprika, salt, and pepper.
- Spread a spoonful of enchilada sauce in a baking dish.
- Fill each tortilla with beef and a sprinkle of cheese, roll up, and place seam-side down.
- Pour remaining sauce over the top and cover with remaining cheese.
- Bake uncovered for 20 minutes or until bubbly.
- Garnish with cilantro before serving.

- Use corn tortillas for a more traditional texture.
