In another bowl, fold the whipped topping into the prepared vanilla pudding until well blended.
In each serving cup or small glass, layer the ingredients starting with a layer of ladyfinger cookies at the bottom.
Add a layer of the pudding mixture over the cookies, followed by a layer of mixed berries.
Repeat the layers until the cups are filled, finishing with a layer of whipped topping and a few berries on top for decoration.
Chill the trifles in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Garnish with mint leaves if desired before serving.
