Preparation Steps
- In a large bowl, combine 1/3 cup of sugar with the grated orange zest and orange juice. Gently fold in the fresh raspberries, blackberries, blueberries, and sliced strawberries until well coated. Cover and refrigerate for 45 minutes.
- While the berries marinate, use a hand mixer to beat 1 cup of heavy whipping cream in a separate bowl until soft peaks form, about 3-4 minutes. In another bowl, combine 16 ounces of mascarpone cheese, 1 teaspoon of vanilla extract, and the remaining sugar. Gently fold the whipped cream into the mascarpone mixture in thirds.
- After the berries are marinated, strain them, reserving the juices for dipping. Briefly dip ladyfinger cookies into the juice and layer them at the bottom of a 13x9-inch dish. Add half of the marinated berries and half of the mascarpone cream mixture. Repeat the layers finishing with the cream.
- Cover the dish tightly with plastic wrap and refrigerate overnight.
- Remove the berry tiramisu from the refrigerator, top with additional fresh berries if desired, slice and serve chilled.
