Blueberry Syrup Preparation
- Combine water, granulated sweetener, and lemon juice in a medium saucepan. Stir until combined. Bring to a gentle simmer over medium heat, stirring until sweetener dissolves, about 5 minutes.
- Add blueberries and stir gently. Simmer for about 15 minutes, stirring occasionally, until blueberries soften and juices are released.
- Mash blueberries in the saucepan using a wooden spoon or potato masher until mostly broken down, about 5 minutes.
- Raise heat to medium and simmer mixture for an additional 8-10 minutes, stirring occasionally until the color deepens.
- Remove from heat and let syrup cool for 10 minutes. Strain through a fine mesh strainer into a bowl or pitcher.
- Transfer the strained syrup to the refrigerator and chill for at least 1-2 hours.
Drink Assembly
- Fill a tall glass halfway with club soda and 3-4 ice cubes.
- Add the chilled blueberry syrup to the glass, followed by half & half. Optionally, top with whipped cream.
