  • 1/2 cup granulated sweetener options include stevia or erythritol
  • 1/4 cup lemon juice fresh is best
  • 1 cup blueberries fresh or frozen
Soda
  • 1 cup club soda can substitute soda water
  • 1/4 cup half & half coconut cream for dairy-free option
Optional Topping

Method
 

Blueberry Syrup Preparation
  1. Combine water, granulated sweetener, and lemon juice in a medium saucepan. Stir until combined. Bring to a gentle simmer over medium heat, stirring until sweetener dissolves, about 5 minutes.
  2. Add blueberries and stir gently. Simmer for about 15 minutes, stirring occasionally, until blueberries soften and juices are released.
  3. Mash blueberries in the saucepan using a wooden spoon or potato masher until mostly broken down, about 5 minutes.
  4. Raise heat to medium and simmer mixture for an additional 8-10 minutes, stirring occasionally until the color deepens.
  5. Remove from heat and let syrup cool for 10 minutes. Strain through a fine mesh strainer into a bowl or pitcher.
  6. Transfer the strained syrup to the refrigerator and chill for at least 1-2 hours.
Drink Assembly
  1. Fill a tall glass halfway with club soda and 3-4 ice cubes.
  2. Add the chilled blueberry syrup to the glass, followed by half & half. Optionally, top with whipped cream.
