Ingredients
  

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas about 2 medium bananas
  • 1/2 cup almond butter or any nut butter of your choice
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the rolled oats, mashed bananas, almond butter, maple syrup, vanilla extract, baking powder, and salt. Mix until well combined.
  3. Gently fold in the blueberries, being careful not to crush them.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  6. Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack.
  7. Once cooled, cut into squares or bars and enjoy!
