Ingredients
  

  • 1 tablespoon vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon grated ginger
  • 8 oz mushrooms shiitake, cremini, or button, sliced
  • 4 cups baby bok choy halved or chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce or hoisin for a vegetarian option
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes optional
  • 2 tablespoons water or vegetable broth
  • 1 teaspoon cornstarch optional, for a thicker sauce
  • 1 teaspoon sesame seeds for garnish

Method
 

  1. Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
  2. Sauté Aromatics: Add garlic and ginger, stir-frying for 30 seconds until fragrant.
  3. Cook the Mushrooms: Toss in the sliced mushrooms and cook for 3-4 minutes until they start to soften.
  4. Add Bok Choy: Stir in the bok choy and cook for another 2-3 minutes until tender but still crisp.
  5. Make the Sauce: In a small bowl, mix soy sauce, oyster sauce, sesame oil, red pepper flakes (if using), water, and cornstarch. Pour over the vegetables and stir well.
  6. Simmer & Serve: Let the sauce thicken for 1-2 minutes, then remove from heat. Garnish with sesame seeds and serve hot!

Notes

  • Want more protein? Add tofu, shrimp, or chicken for a heartier dish.
  • For extra crunch, toss in water chestnuts or bell peppers.
