Step-by-Step Instructions
  1. In a large mixing bowl, whisk together palm sugar, fresh lime juice, fish sauce, and minced red chilli for 2-3 minutes until the sugar fully dissolves.
  2. Add the pomelo segments, roasted peanuts, shredded coconut, dried shrimp (or chickpea flour), shallots, kaffir lime leaves, and lemongrass into the bowl with the dressing.
  3. Gently mix the salad components using a folding motion for about 1-2 minutes.
  4. Taste the salad and adjust flavors as needed by adding more palm sugar, lime juice, or minced red chilli.
  5. Transfer the salad to a serving platter, garnish with fresh mint leaves and crushed peanuts, and serve immediately.
