Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • ½ head green cabbage chopped
  • 1 can diced tomatoes with green chilies 10 oz
  • 1 tablespoon taco seasoning
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onion and garlic until fragrant, then add ground beef and cook until browned.
  3. Stir in chopped cabbage, diced tomatoes, taco seasoning, cumin, salt, and pepper.
  4. Cover and cook for 10 minutes, stirring occasionally, until cabbage is tender.
  5. Top with shredded cheese, cover until melted, then garnish with cilantro and serve.
