Ingredients
  

  • 8 oz spaghetti or penne
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 can 6 oz salmon, drained and flaked
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Cook pasta according to package instructions. Reserve ¼ cup pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Stir in salmon and cook briefly.
  4. Add heavy cream, parmesan, lemon juice, salt, and pepper. Simmer for 2–3 minutes.
  5. Toss in pasta and reserved pasta water to thin the sauce as needed.
  6. Garnish with parsley and serve.

Notes

  • Add peas or spinach for veggies
  • Substitute cream with Greek yogurt for a lighter version
  • Use tuna if salmon is unavailable
