Step-by-Step Instructions
  1. Slice the thick bread into two pieces and toast until golden brown for about 2-3 minutes per side.
  2. Melt salted butter in a non-stick skillet over medium heat and whisk together eggs, milk, salt, and pepper until combined. Pour into the skillet and gently stir for 2-3 minutes until fluffy.
  3. Halve the avocado, scoop out the flesh, and mash it in a bowl. Slice fresh mozzarella and halve the cherry tomatoes.
  4. Spread the mashed avocado on one slice of toasted bread, layer with mozzarella, scrambled eggs, and cherry tomatoes.
  5. Garnish with fresh basil leaves and season with salt and pepper before serving.
