- Heat a large skillet over medium heat and add 1 tablespoon of unsalted butter. Once melted, add sliced ripe peaches, 2 tablespoons of brown sugar, and a pinch of cinnamon. Cook for 3–4 minutes on each side until the peaches are golden brown and tender, allowing their natural sweetness to intensify. Remove them from the skillet and set aside to cool.
- While the peaches are caramelizing, slice your sourdough or ciabatta bread into thick slices. Spread softened unsalted butter generously on one side of each slice. On the other side, drizzle with olive oil to help create a crispy crust during grilling.
- On the oiled side of a slice of bread, layer slices of creamy Brie cheese evenly. Next, add a generous portion of the caramelized peaches on top of the Brie. For an extra touch of sweetness, drizzle a bit of honey and, if desired, scatter some fresh basil leaves. Finally, place another slice of bread, buttered side up, to complete the sandwich.
- With the skillet still over medium heat, carefully place your assembled sandwiches in the skillet. Press down gently with a spatula to encourage even grilling. Cook for 3–4 minutes until the bread is golden brown and crispy, then carefully flip the sandwiches and grill the other side until the Brie is melted.
- Once grilled to perfection, remove the sandwiches from the skillet and let them cool slightly. Slice each sandwich in half to reveal the gooey Brie and sweet peaches inside. For an extra indulgent touch, drizzle more honey on top.
