Caramelization
- Heat a skillet over medium heat, add unsalted butter to melt, then add sliced peaches, brown sugar, and cinnamon. Sauté for about 3-4 minutes until golden.
- Slice sourdough or ciabatta bread thickly, spread butter on one side and drizzle olive oil on the other.
Sandwich Assembly & Grilling
- On the oiled side of a slice of bread, layer slices of Brie, top with sautéed peaches, drizzle honey, and scatter basil. Place another slice of bread on top.
- Grill assembled sandwiches in the skillet, pressing gently. Cook for 3-4 minutes per side until golden and Brie melts.
- Slice and serve warm, optionally drizzle with honey.
