Method
- Preheat oven to 350°F. Grease a springform pan.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, oil, sugars, carrots, pineapple, and walnuts. Combine with dry ingredients.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour carrot cake batter into pan. Gently spoon cheesecake layer over the top.
- Bake for 50–60 minutes or until center is set. Cool and chill before serving.
Notes
- Top with cream cheese frosting or glaze
- Use pecans instead of walnuts if preferred
- Tastes even better the next day
