Method
- Marinate the Chicken: In a bowl, whisk together hoisin sauce, honey, oyster sauce, soy sauce, Shaoxing wine, sesame oil, five-spice powder, white pepper, ketchup, garlic, ginger, and food coloring (if using). Coat the chicken thoroughly and marinate for at least 2 hours or overnight.
- Preheat & Prepare: Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Roast: Arrange the chicken on the rack, discarding excess marinade. Roast for 20 minutes.
- Caramelize: Brush extra honey over the chicken, then broil for 3-5 minutes until the surface is glossy and slightly charred.
- Rest & Serve: Let the chicken rest for 5 minutes before slicing. Serve with rice, noodles, or steamed vegetables.

- For extra charred flavor, grill the chicken instead of broiling.
