Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp hoisin sauce
  • 2 tbsp honey
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine or dry sherry
  • 1 tsp sesame oil
  • 1 tsp Chinese five-spice powder
  • 1/2 tsp white pepper
  • 1 tbsp ketchup
  • 2 cloves garlic minced
  • 1 tsp grated ginger
  • 1/2 tsp red food coloring optional

Method
 

  1. Marinate the Chicken: In a bowl, whisk together hoisin sauce, honey, oyster sauce, soy sauce, Shaoxing wine, sesame oil, five-spice powder, white pepper, ketchup, garlic, ginger, and food coloring (if using). Coat the chicken thoroughly and marinate for at least 2 hours or overnight.
  2. Preheat & Prepare: Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  3. Roast: Arrange the chicken on the rack, discarding excess marinade. Roast for 20 minutes.
  4. Caramelize: Brush extra honey over the chicken, then broil for 3-5 minutes until the surface is glossy and slightly charred.
  5. Rest & Serve: Let the chicken rest for 5 minutes before slicing. Serve with rice, noodles, or steamed vegetables.

Notes

  • For extra charred flavor, grill the chicken instead of broiling.
  • Storage Tip: Leftovers keep well in the fridge for up to 3 days. Reheat in a pan or oven.
