Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups cooked rice white or brown
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro optional
  • Tortilla chips for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, chili powder, cumin, garlic powder, onion powder, and cooked rice. Mix well until all ingredients are evenly combined.
  3. In a greased 9x13 inch baking dish, spread half of the chicken mixture evenly across the bottom.
  4. Layer half of the shredded cheddar cheese over the chicken mixture.
  5. Spread the remaining chicken mixture on top, followed by the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let it cool for 5 minutes. Drizzle sour cream on top and sprinkle with fresh cilantro if desired.
  8. Serve with crushed tortilla chips on the side or sprinkle them on top for added crunch.
