Method
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, rice, beans, corn, salsa, taco seasoning, garlic powder, onion powder, and 1 cup of cheese.
- Transfer the mixture to a greased 9x13-inch baking dish.
- Spread sour cream over the top and sprinkle with remaining cheese.
- Bake uncovered for 25–30 minutes, or until bubbly and golden.
- Garnish with chopped cilantro and serve.

- Use rotisserie chicken for convenience.
- Can substitute brown rice or quinoa.
