Fold in the corn kernels, green onions, and shredded cheddar cheese (if using). Mix until the ingredients are evenly distributed.
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Scoop spoonfuls of the batter into the hot oil, flattening each slightly with the back of your spoon.
Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
