Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 cup milk
  • 1 large egg
  • 2 cups fresh or frozen corn kernels
  • 1/4 cup chopped green onions
  • 1/4 cup shredded cheddar cheese optional
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika.
  2. In a separate bowl, beat the egg and mix in the milk until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until just combined, forming a thick, smooth batter.
  4. Fold in the corn kernels, green onions, and shredded cheddar cheese (if using). Mix until the ingredients are evenly distributed.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  6. Scoop spoonfuls of the batter into the hot oil, flattening each slightly with the back of your spoon.
  7. Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. Serve the fritters warm with your favorite dipping sauce.

Notes

    • If using frozen corn, be sure to thaw and drain it well to avoid excess moisture in the batter.
    • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
    • Want a healthier option? Bake the fritters at 375°F (190°C) for about 12-15 minutes on each side instead of frying.
    • Experiment with flavors by adding fresh herbs, chili flakes, or grated Parmesan cheese to the batter.
    • Leftover fritters can be reheated in the oven or air fryer to restore their crispy texture.
